Chicken & Corn a la Casa de S.A.

Couldn't be more proud of our cousin Jose, who recently launched a spice company, Casa de S.A. https://casadesafoods.com/ . Bold flavor with a touch of spice and touch of sweet, the Tex-Mex Blend is the star of this simple chicken and corn preparation. This version consisted of a whole chicken cooked on a cast iron pan on the grill, but the spice mix will work with any poultry and cooking method. Use the leftover chicken for tacos, salads, rice bowls, elotes, sandwiches and more!




Ingredients

Whole chicken - Broken down - separate the wings , the drumsticks + thighs, but leave the chicken breast and cavity intact in order to allow for everything to cook at the same time.


This recipe includes searing on a cast iron pan, then finishing, all on the grill. This can easily be seared on the stovetop, then finished in the oven.


Casa de S.A. - The Tex-Mex Blend

Avocado Oil

Lime

Mayonnaise

Butter

Cilantro

Corn on the cub- husked - chopped in half


Steps

  • Rub the chicken with a little avocado oil, then fully cover all parts of the chicken with the Tex-Mex the seasoning, allow to sit for 15-30mins.

  • Add the chicken to the unheated cast iron pan, skin down for the legs and thighs, and the midsection back-side down the with the breasts elevated.

  • The chicken cooking times are based on a 4.5lb chicken.

  • If using a grill, set to medium temp (425-450F), and if possible, add the pan to a part of the grill without direct heat and flame.

  • After about 25 minutes, the bottom of the chicken drumsticks and thighs should be seared, flip them over.

  • Corn

    • Cut the corn in half and Boil in water for about 10 minutes. remove and pat dry when cooled off enough.

    • Slather the corn with a teaspoon of mayo and butter, season with the Tex Mex Blend.

    • Add corn to the cast iron pan to sear.

  • Cook the chicken for another 30 minutes, or until the thickest part of the breast is 165 degrees.

  • Remove from heat, add corn to the cast iron pan if it wasn't added before. Rotate every 3-5 minutes.

  • Serve, top with lime and cilantro!
