Mushrooms, Celery, Garlic over Farro

Any mushroom varietal will work for this dish. The celery provides the crunch while the farro extends the flavor of the mushrooms in every bite.

Recipe Steps
Boil 1 cup of Farro- for 20 minutes in salted water.
In a saute pan - add chopped celery ( half a stalk) , chopped mushrooms ( 3 portobello caps or 1 large package of any mushrooms) with olive oil.. After about 3 minutes of sauteing, add 1/2 clove of chopped garlic. ensure that the mushrooms are cooked through, if they're too thick you may need to cover the pan, and possibly add liquid to steam.
Once cooked, strain the farro, then add into the saute pan and incorporate with the mushroom celery mix.
Substitutes
You can use any combination of garlic, onions, shallot, green onions or even pickled red onions
for a richer farro, use chicken broth instead of water..
