MahiMahi with Tomato Mint Chutney

A combo of a simply seasoned fish that is paired with fresh and sweet tasting tomatoes and mint. Flexible to pair with any vegetable. Avoid any charring or strong flavored preparation methods for the fish, baking or steaming is preferred, perhaps using the parchment paper methods that are regaining popularity.

Seafood

1 Mahi Mahi filet (sub halibut, tilapia, haddock, turbot,swordfish)

Season simply with salt, black pepper, and optionally, a simple dried herb like parsley or basil.

If using a parchment paper steam or baking method, make sure to use food/heat safe and unbleached wax paper.


Bake fish , prepare chutney separately.



Tomato & Mint Chutney

1 Large Heirloom Tomato or 2 Roma Tomatoes - diced

Handful of fresh mint - chopped

1 Tbsp of Olive Oil

1/2 Tsp Salt

Black Pepper

Optional: minced garlic and diced onion

Spinach,

Asparagus

Squash, Zucchini

Artichokes,

Yucca

Potatoes

Cauliflower
