Baked Shrimp in Tomato, Pepper & Feta

This is a classic dish that's served in seaside taverns all over Greece. It breaks the dairy and seafood rules, but is an excellent combination that's perfect with some rustic bread. The basked feta in tomato sauce and herbs is bolstered by the sweetness of the red bell pepper. Finally, the shrimp adds an element of salinity to the preparation. The best part, this is a one pot dish you can simply throw in the oven to bake.



Ingredients

16oz Shrimp - frozen or thawed, optional whether you want the tails on (we left them on for the picture)

6 oz of feta blocks - you can leave whole or break into cubes. Imported sheep is best. Sub in goat cheese if desired.

14oz crushed tomatoes - a can is sufficient for this recipe.

1 Tbsp - garlic powder or 1 clove minced

2 Tbsp olive oil

1 tsp red pepper flakes (optional)

1/2 bell pepper - julienned

1 Tbsp oregano

1 Tsp thyme (optional)

1oz cup white wine (optional)

1 Tbsp Salt

1 Tsp black Pepper




Steps

  • Set an oven to 400 degrees - bake - middle rack

  • In a small dutch oven, ceramic dish , clay baking dish (traditional), or an oven safe skillet, add all of the ingredients except the white wine to a pan.

  • Bake for 10 minutes - the shrimp should turn white and the feta should start to melt. Add the splash of white wine (optional). Do not stir.

  • Bake for another 5 minutes.

  • Remove and serve with bread.
