Avocado Salsa Verde

A smooth salsa with brightness, tang and body, this classic combo of tomatillos, cilantro and lime is mellowed with Avocado. Enjoy this as a table salsa with chips, or add to tacos, eggs and any of your other favorites.
The key to pulling off this salsa is 1) flavorful peppers, 2) getting some char on the ingredients and 3) cooking down the tomatillos to extract the sweetness and temper the tartness. A blender is required to fully emulsify the avocado and cilantro so every bite is fully flavored.

Ingredients
5 medium sized tomatillos
1/2 large avocado
1 lime juiced
Medium: (slice lengthwise - remove stems)
1 Jalapeno pepper
1 Poblano pepper
Spicy: (slice lengthwise - remove stems)
1 Jalapeno pepper
1/2 poblano pepper
1 Serrano pepper
Handful of cilantro
1/2 medium sized onion
2 garlic cloves - peeled/whole

Steps
The preferred method is to sear and char the ingredients on a hot grill or in a cast iron pan , then transfer to the oven to roast, or broil. The sear can also be achieved under the broiler in the oven.
Start by boiling the peeled garlic cloves for 10-15 minutes to soften. Turn off heat , reserve liquid.
Slice the peppers in half , lengthwise, and sear , along with the onion and tomatillos. Rotate the ingredients every few minutes to develop char on all sides. Remove the onions and peppers, and transfer the tomatillos to the oven to cook down (375 degrees, or under the broiler set to low). that step should take about 7-10minutes.. The tomatillos will lose their bright green color when ready.
Remove the tomatillos and set the ingredients out to cool off. Some people remove the charred skin from the ingredients, but it's not required.
Prepare a ripe avocado, slicing it in half, and scooping out half.
In a blender, add all of the ingredients, plus the avocado, cilantro, lime juice and a Tsbp of Salt. Blend until fully pureed. If the consistency is too thick, add some of the water from the garlic pot. If it's too runny, add avocado.
Salt, and Lime to taste. Additionally, you can add more fresh cilantro and diced onion after the blending process.
