Arugula Anchovy Salad

Strictly for the anchovy lovers, this salad is peppery, zesty and bright. Pretty easy to whip up, add some crunchy bread or serve with your favorite seafood main.
Key to this recipe is using anchovies that aren't brined or cured in salt. Our favorite brand of anchovies kept in olive oil is wild planet.

Ingredients (Serves 2)
5oz Arugula (1 standard container)
Dressing
4 tsp mayo
2 Tbsp olive oil
8 oz anchovy- not salt cured
1 Tsp salt,
1/2 Tsp Black pepper
2 Tsp White wine vinegar
1/4 lemon juice
Recipe
The key to this salad is creating a thick and smooth dressing to coat the arugula uniformly. To achieve this, remove the anchovies and chop and mince them finely, removing any large bones. Once minced, add the anchovies other wet ingredients to a bowl and continue to mash the anchovies with a fork. Alternately , you can use a food processor, but it's a bit overkill for small servings.
Before serving, add the dressing to the arugula in a large bowl and toss. Add black pepper, and lemon to taste.
